Huevos Rancheros...Sorta

Okay remember the spicy pulled pork I blogged about earlier? Well I made it again for a taco party I hosted lasted night (more about that later). Anyways, we had lots of leftovers and I decided it would make a delicious breakfast. Super easy and super yummy. You can really use any meat you want (but I highly recommend the pulled pork) or some refried beans.

Huevos Rancheros...Sorta
- Flour Tortillas
- Pulled pork (or any other cooked meat or refried beans)
- Eggs
- Salsa
- Shredded cheese (I used Monterey Jack)
- Avocados

Start by heating up the meat or refried beans. Warm the tortillas then top them with meat/beans. Top with a fried egg. Then you can just go crazy. Add some shredded cheese, salsa, hot sauce, sour cream, avocado slices, etc... Let your imagination run wild. Grab a fork and napkin and dig in. Its what chad would call "a mans breakfast."

Blueberry Pancakes!

Attention: This isn't a ground breaking recipe or anything of the sort. This is just a FYI blog post. Pancakes are really easy to make. I feel like people forget that...well at least I do. When I kept staring at the large container of blueberries in my fridge I couldn't decide what to do with them. Yes, of course eat them...but how, in what, with what. Then it hit me. Blueberry Pancakes! What a great way to start off the weekend. My sweet husband went to the store while I was at work and picked up some pancake mix and syrup. The rest was history.
Sure you can make your own batter and it would probably taste better but I took the easy way out...Bisquick Shake n Pour. You don't have to use blueberries. Chocolate chips add a nice touch, maybe some coconut, or some cinnamon, even bananas. The possibilities are endless and really fun.

Just follow the directions on the Bisquick box. They don't have to be perfect cause mine were not at all. Some were round, some were oval, some were burnt, some were undercooked. BUT they were all delicious.

How yummy does that look. So folks the moral of the story is have a pancake party this weekend. Put out all the toppings and let people have fun. You can thank me later ;)
